Acorn Squash by Catfight Craft When it’s cold and you want to warm up with something sweet, but not feel so guilty—candy some vegetables! We love buttering acorn squash with a lil’ sugar ‘n’ cinnamon. But this season, we warmed up the recipe by adding savory Indian spices. It’s such a well-rounded flavor! And, like a dessert, it’s best enjoyed last!

Sweet Acorn Squash

  • Servings: 2
  • Difficulty: easy

  • 1 Small-Med Squash, halved
  • 2 Tbsp Butter
  • 2 Tbsp Brown Sugar
  • 1/4 tsp Garam Masala
  • 1/16 tsp Cinnamon
  • 1/16 tsp Allspice or Nutmeg
  • (optional) Pinches of Cardamom

Halve the squash lengthwise. Cut a sliver of the skin off each side, so the squash sits flat on the baking tray. Add butter to the tops and centers, and sprinkle seasonings on. Bake in 350 degree oven for 40-55 minutes, or until the squash is golden brown, and easily pulls apart from the flesh. It should not be stringy. Once or twice during baking, drizzle the buttery spices onto sides of squash. Let it cool for 10 minutes, and enjoy!
